Receta con un ingrediente cada vez más común en la cocina occidental.
  1. Ponemos las setas en agua para que se hidraten. Una media hora mínimo.
  2. En el mismo agua las ponemos a cocer lentamente con un poco de salsa de soja.
  3. Picamos el puerro y lo pochamos con aceite de oliva.
  4. Idem con la zanahoria.
  5. Tras 15 minutos de cocción sacamos las setas del agua (que ahora será caldo de setas)
  6. Vamos añadiendo el caldo poco a poco a nuestro arroz, moviéndolo a cada rato.
  7. Cortamos las setas en láminas y descartamos los bastones de las setas.
  8. Añadimos las setas al arroz. Vamos removiendo y añadiendo caldo según nos lo vaya pidiendo.
  9. Cuando estemos cerca de la cocción del arroz añadimos parmesano picado para que se deshaga.
  10. Dejar reposar el arroz un par de minutos antes de servir.
  • En el video hemos añadido un poco más de parmesano rallado y perejil fresco picado.
