SALMON & AVOCADO TARTAR
Ingredients
- Fresh pink salmon
- Ripe avocado
- Mustard “à l’ancienne”
- Parsley
- Hot oil
- Lemon zest
- Sesame
- Salt to taste
Method
- Cut avocado and salmon into cubes.
- Add the lemon zest and the parsley finely chopped.
- Add the Mustard “à l’ancienne”.
- A splash of hot oil, salt and mix everything. Avoid smashing too hard the avocado.
- Let it cool down for 20-30 minutes in the chiller before serving.
**Notes
- We’ve served the dish using an iron ring and a slice of bread as base. Sesame is one of salmon’s best friends.
