SALMON & AVOCADO TARTAR

Ingredients

  • Fresh pink salmon
  • Ripe avocado
  • Mustard “à l’ancienne”
  • Parsley
  • Hot oil
  • Lemon zest
  • Sesame
  • Salt to taste

Method

  1. Cut avocado and salmon into cubes.
  2. Add the lemon zest and the parsley finely chopped.
  3. Add the Mustard “à l’ancienne”.
  4. A splash of hot oil, salt and mix everything. Avoid smashing too hard the avocado.
  5. Let it cool down for 20-30 minutes in the chiller before serving.

**Notes

  • We’ve served the dish using an iron ring and a slice of bread as base. Sesame is one of salmon’s best friends.
